Cupcakes were first referred to as “1234 Cakes” or “number cakes” in the 1700s. This was due to the fact that recipes at the time only called for one cup of butter, two cups of sugar, three cups of flour, four eggs, one cup of milk, and one tablespoon of baking soda.

The consensus is that cupcakes are an American invention. There is still debate over whether the first cupcake recipe appeared in 1776 or 1796.

What is certain is that D.R. “Doc” Rice is the gentleman to thank for the 1947 redesign of cupcakes that resulted in the modern cupcake. And boy, did it pick up speed!

Classic cupcakes Recipe

The classic cupcakes recipe is the good old traditional cupcakes recipe you most likely grew up with, or at least I did.

Within 30 minutes you can start serving tea because that is about how long it will take to make, preparation time included.

What you need

2 cups self-rising flour
¾ cup caster sugar
2 large eggs, beaten
¾ cup milk
125 g butter melted and cooled
1 tsp vanilla essence
Sprinkles to decorate

What to do

Preheat the oven to 180ºC (350ºF).
Grease a 12 x ½ cup capacity muffin pan. Alternatively, line holes with paper cases. Combine flour and caster sugar in a bowl. Make a well in the center.
Add the rest of the cupcake ingredients. Using a large metal spoon, stir gently to combine.
Spoon the mixture into the prepared muffin pan.
Bake for 12 to 15 minutes, or until a skewer inserted into the center comes out clean.
Have it rest in the pan for 5 minutes. Thereafter, put it on a wire rack to cool.

Decadent & Moist Cupcakes

And then we have my favorite cupcake recipe: oil instead of butter, and extra vanilla essence! If you have not tried it yet, now is the time. It will be your new go-to recipe for cupcakes!

What you need

¾ cup caster sugar
1 ¼ cup all-purpose flour
1 tsp baking powder
¼ tsp baking soda
½ tsp kosher salt
¾ cup milk
1 tbsp vanilla essence
¼ cup vegetable oil
1 large egg

What to do

Preheat the oven to 180ºC (350ºF).
Grease a 12-cup capacity muffin tin or line it with cupcake liners.
In a large mixing bowl combine the sugar, flour, baking powder, baking soda, and kosher salt. Whisk lightly to combine and make a well in the center.
Next add the milk, vanilla, vegetable oil, and egg. Mix to combine but take care not to overmix.
Spoon the mixture up to ⅔ of the way for each cup.
Bake for 18 minutes, or until a skewer inserted into the center comes out clean.
Have it rest in the pan for 5 minutes. Thereafter, put it on a wire rack to cool.
